The independent breweries mainly produce what is called Real Ale - defined as "draft or bottled beer brewed from traditional ingredients, matured by secondary fermentation in the container from which it is dispensed, and served without the use of extraneous carbon dioxide". Most of the beer produced in this country in not real ale - it is pasteurised and served using carbon dioxide or electric pumps.
